CHEF DE CUISINE
A Texas native, Ozzy was raised with a love for gastronomy.
After finishing the culinary studies hat El Centro College, Ozzy went on to work in some of the most prestigious kitchens in Dallas including:

Ozzy brings Over 27 years of restaurant experience to La Parisienne and a food sensibility matched by few.
At La Parisienne, Ozzy plans on serving the finest French dishes using freshest ingredients. He will use his skills in promoting team atmosphere, motivating staff, overseeing creation and execution of recipes and seasonal menu planning, food plating presentation, and signature dish creations that will make La Parisienne standout amongst its competitors and will offer ultimate dining experience for friends and family.

Hugo Galvan
GÉRANT, MANAGER
Raised and born in San Miguel De Allende. Hugo Galvan made his way to Cabo San Lucas to achieve experience as a chef before moving to the United States to open his own restaurant, Cafe San Miguel in Dallas.
After a successful run, he opened his second restaurant inspired by his tour through Spain and France where he honed his skills further.
Upon returning to the States he opened Hacienda San Miguel in Fort Worth.
In 2015 Galvan was contacted by Chef Stephan Pyles to assist with the opening of Flora St. Cafe. After working under Chef Pyles for a year, he went on to develop menus for iconic Dallas restaurants.

Claudia Cerecero
CHEF PÂTISSIER, ARTISTE DE GÂTEAU
In her adulthood she decided to combine her two greatest passions: Pastry and Design. Her experience as a creative Graphic Designer and as a Pastry Chef make her the perfect cake artist. This is an unusual blend of the two things she loves most in life. In 2019 she was certified as Pastry Specialist by El Centro College, Dallas.
With over 15+ years of experience under the toque, our chef offers a delicious selection of cakes, pastries, entremets and other desserts inspired by her many travels including 4 years stay in Quebec (the French Provence of Canada) and 6 months living as a local in Brussels, Belgium, with a focus on seasonality and flavors. Worked to deliver the DFW area with a unique culinary experience that has delighted tasters near and far. With a focus on exceptional quality and bold flavors.
She has undergone extensive training with some of the best chefs from The French Pastry School of Chicago, Barry Calebaut Chocolate Academy of Chicago and a continue learning from El Centro College. Also is a former pastry from Hilton in Dallas and New Mexico, Zaza Hotel, Knife Steakhouse, Compass Group, Wolfgang Puck Catering, and Park House Club in Highland Park Village.
Furthermore, she has been fortunate to create a successful baking business and online presence that shares unique recipes with others. Along with a growing online following, she’s always sharing new creations, advice, and tricks.
She believes that there is nothing more satisfying than making people happy through a mouthwatering foods, breads, and pastries she makes. She had been inspired by her favorite patissiers and chefs, together with her personal flair for baking, she create unique and exquisite recipes for years.
“Baking delectable treats and making people happy has been a passion of mine offering faultless creations. The undeniable aroma of freshly baked bread and cakes brings joy to everyone around, while great meal is a perfect way bringing people together and creating joyful and unforgettable memories and stunning anyone who enjoy them”.
She always exceeds every expectation, taking your order to its full potential and creating nothing less than perfection. In every production line, she breaks the boundaries of service, flavor, and texture. Her creativity knows no bounds, and her unique designs are sure to surprise you.
Claudia cares about you and your celebration, whether it’s a wedding, a birthday party, a shower, or any other event. She embraces each project, taking it to the next level and creating a new masterpiece every time.
In Claudia’s production her successful blend of French tradition and American sophistication is always present. Her pastries, cakes and savory treats are a harmonious blend of meticulously chosen flavors, perfect for brunch, lunch, or tea.

Mondana (Mondi) Tag, Esq.
FOUNDER
Mondana (Mondi) Tag is a successful attorney with over 20 years of experience. Born and raised in Texas, she has been a foodie all her life and after working for some of the larger law firms in Dallas and having her own law firm for several years, she decided to become an owner-operator of her own restaurants.
Mondi was the first female franchisee owner- operator for Dickeys BBQ’s in Dallas at age 19 along with her mother. Together they also co-owned and operated another restaurant franchise Genghis Grill prior to becoming an attorney. Mondi has extensive knowledge in operating restaurants and recently opened Spatch Kitchen & Bar in October 2021, a full service American restaurant with bar and late night lounge. She followed that by opening Fiatto Italian Restaurant and Bar in April of 2022 located at West Village.
From her travels to France she had a vision for a concept that would provide authentic casual French food with concentration on fresh ingredients, brunch, espresso, coffee drinks, pastries, and fines wines & champagnes, curated mixology, as well as lunch and dinner menu of delicious french entrees, sandwiches, soups, and salads.
Mondi along with assistance of her team of the executive chef Ozzy, her general manager Hugo and the Mayavian Creative Studio international designers has been able to bring this concept to life. Through hard work and dedication her love for Paris and Parisienne food is captured in every detail of the restaurant.
La Parisienne is a cozy yet playful French dining experience. All ages gather together to taste some of the most popular French dishes in Dallas, while providing a serene design, good vibes, and instragrammable setting that is second to none.
Mondi's idea is to bring the best of French food, wine and cocktails to life all in one place.

In a statement, Tag says La Parisienne is inspired by Paris.
"We want our guests to feel as if they are sitting in a chic cafe in Paris enjoying French food and desserts along with sipping on a cocktail, tea, or coffee," she says. "All of our desserts are made from scratch with our standout being the Napoleon pastry along with our hazelnut praline and eclairs in a variety of flavors."
